Zupa Toscana X Baked Potato Soup

When we cook in our kitchen, we play things fast and loose. So a recipe is usually just a guideline. Depending on what we are trying to create, it changes every time. SO, consider the following a “guideline” for your own delicious soup! Add and subtract as you see fit.

Need more broth? Add more water and broth base. Want a thicker broth? Add more cream or cheese. Add extra veggies, and leave out any that aren’t a favorite in your home. We like to add some spice to our soups sometimes! The sky is the limit. Don’t confine yourself to the recipe text box below. Have fun and enjoy!

Ingredients

  • 12 cups water + vegetable stock base / premade broth (beef/chicken work too!)

  • 2 cups heavy whipping cream

  • 5 large carrots

  • 10 average sized potatoes

  • 3 onions

  • 3 Tbsp minced garlic

  • 5(ish) cups of kale

  • 1/2-1 lb bacon

  • 1 lb sausage (we love using italian)

  • 1 package of mushrooms

  • 1 bag of sharp cheddar (you can also use sliced)

Directions

  1. First start cooking the sausage in a pan.

  2. Preheat oven to 350 degrees.

  3. Add water and stock base to large pot, heat on high.

  4. Wash or soak all vegetables (Get the nasty preservative chemicals off!)

  5. Peel and cut all vegetables (slicing size reference above) - Carrots, onions, potatoes (we don’t always peel these), kale, mushrooms.

  6. Add vegetables to pot as they are cut.

  7. Put bacon into oven. We usually bake ours for about 35 minutes. we prefer crispy. You can cook the bacon whichever way feels right for you.

  8. Once sausage is cooked all the way through, add water to the pan and then drain the grease/water mixture. Add to pot.

  9. Add garlic, cream, and any other spices you see fit.

  10. Once bacon is cooked, pat dry of grease, then cut/crumble and add to the pot.

  11. Turn Down heat to Medium and add cheese.

  12. Cover and mix occasionally (the cheese may stick to the bottom and burn, so don’t forget to mix!)

  13. Once the potatoes are cooked all the way though, it is ready to eat! Turn heat to simmer and enjoy. :)
